Healthy Almond Butter Granola

  • 2 cups gluten-free rolled oats
  • ¼ tsp cinnamon
  • dash of salt
  • ¼ cup raw unsalted almond butter
  • ¼ cup pure raw honey
  1. Preheat oven to 325˚F. Grease a 7 x 11 in glass pan with olive oil (if you don't have this size, you can use a bigger pan and bake for less time).
  2. In a medium-sized bowl, mix together rolled oats, cinnamon and salt.
  3. Melt together honey and almond butter on stovetop on a low heat, or in microwave for about 45 sec (they don't have to combine fully, just soften up so that they're not as thick and easier to mix).
  4. Add the wet mixture to the oats mixture and stir. The oats should all be covered in honey and almond butter mixture; if they're not, you may need to add a little more almond butter.
  5. Spread the contents of the medium-sized bowl into the pan and bake at 325˚ for 20-23 minutes, or until the granola starts to turn golden brown, depending on how your oven bakes.
  6. Allow the granola to set up and cool for about 10 minutes, and enjoy!
