Healthy Blueberry Baked Oatmeal

  • -2 cups gluten free rolled oats
  • -1 tsp salt
  • -1 tsp gluten free baking powder
  • -1 tsp cinnamon
  • -2 cups unsweetened almond milk
  • -1½ cups blueberries...fresh or frozen...we use frozen
  • -1/4 cup raw honey
  • - 2 tbsp extra virgin olive oil
  • - 1 egg
  1. Preheat oven to 375˚F and grease an 8 x 8 (or 9 x 9) baking dish.
  2. Combine oats, baking powder and salt in a small bowl. In a larger bowl, mix together almond milk, honey, egg and oil.
  3. Gradually add the oat mixture to the larger bowl and then gently fold the blueberries into the larger bowl.
  4. Pour the mixture into the greased baking dish and bake for 30-35 minutes.
  5. When the oatmeal done, or starting to brown on the edges, set the oven to broil and broil for about 1 minute to make the top golden brown.
