Healthy Blueberry Baked Oatmeal

- -2 cups gluten free rolled oats
- -1 tsp salt
- -1 tsp gluten free baking powder
- -1 tsp cinnamon
- -2 cups unsweetened almond milk
- -1½ cups blueberries...fresh or frozen...we use frozen
- -1/4 cup raw honey
- - 2 tbsp extra virgin olive oil
- - 1 egg
- Preheat oven to 375˚F and grease an 8 x 8 (or 9 x 9) baking dish.
- Combine oats, baking powder and salt in a small bowl. In a larger bowl, mix together almond milk, honey, egg and oil.
- Gradually add the oat mixture to the larger bowl and then gently fold the blueberries into the larger bowl.
- Pour the mixture into the greased baking dish and bake for 30-35 minutes.
- When the oatmeal done, or starting to brown on the edges, set the oven to broil and broil for about 1 minute to make the top golden brown.
